First things first.
I am not a food blogger.
You will absolutely not find recipes for six course, fancy meals here. Honestly, most dinners in our house are the same ten-ish meals on repeat. Sometimes I really switch things up and try a new pasta recipe, or mayyybeee we will have fajitas on Taco Tuesday instead of the staple ground beef tacos. Brinner is a big hit with the kids, so you’ll also find pancakes, waffles, or biscuits and gravy as part of our dinner rotation. But that is about as elaborate as it gets. We like it that way. Actually, maybe it is mostly me who likes it that way, and since I do a lot of the cooking, that is how it goes. I feel the need to let you know I can’t take the credit for all of the cooking, particularly if it's made on a grill. Credit for that goes to my handsome husband or as I sometimes like to call him Grill Master Elgas.™
I do love to bake though. This is a semi-new love, but I can say with confidence it is the real deal. If I could bake every day, I most definitely would. Sometimes I bake two days in a row knowing full well that there is literally no way my family will eat it all and I’m passing out muffins and cookies like I am Oprah. I scour the internet daily looking for new recipe ideas. Sometimes I’ll try one exactly as I find it, but the more I bake, the more confident I am becoming. I can usually look at a recipe now and decide if/what I’d like to switch out and what I’d like to replace it with. I know what flours I prefer to bake with and which I don’t love that much. One time I accidently used coconut flour instead of oat flour in a recipe and those banana muffins were awful. Let’s just say, every flour has a really cute label from Paper and Pear now.
If you have small children this one might be a shocker to you, but I enjoy baking the most when I am doing it with my kids. As someone who really doesn’t like clutter or messes, I surprised myself with this one. I like control. I like to be in control. I like to think I can be in control even when I’m probably not. Control is the friend I know I need to take breaks from sometimes, but rarely find myself able to do it.

Correct, that would be baking with children, and control.

Baking with children, and practicing their fine motor skills.
Baking with children, and improving their math skills
Baking with children, and practicing reading and writing.
Baking with children, and instilling confidence.
Baking with children, and quality time with those children.
I could think of several others, but you get where I’m going. I have found that the benefits to inviting my kids to join me in the kitchen far outweigh my desire for control.
I was really nervous when I first started baking. I thought I’d mess up every single thing I attempted. I’ve heard so many times in my life how it is an exact science, and how difficult it is. I’m here to tell you, I haven’t felt that to be the case at all. Sometimes I level my teaspoons, sometimes they are heaping. Sometimes we accidentally spill a bit more vanilla than we meant to. Sometimes the kids start the stand mixer and send the flour flying all over the counter. So far, every recipe that we’ve made has turned out. Some definitely taste better than others, but we’ve never not enjoyed the attempt.
My kids LOVE donuts, and I don’t love the price of them. I also don’t love the amount of sugar and other crap that are in the store bought donuts so finding a good donut recipe was a priority for me. This gluten free baked cake donut is in regular rotation in our house. I also serve it to guests frequently too and everyone (I am not exaggerating even a little bit) loves it. I think it's the nutmeg? I can’t say for sure what it is, but they are delicious. I hope your family enjoys them as much as ours has!
Gluten Free Baked Cake Donuts with Vanilla Glaze and Sprinkles.
Dry Ingredients:
1 ½ cups gluten free flour
⅔ cup granulated sugar
2 teaspoons baking powder
¾ teaspoon salt
¼ teaspoon nutmeg
Wet Ingredients:
2 teaspoons vanilla extract
1 teaspoon apple cider vinegar
2 eggs
¾ cup milk*
½ cup oil*
Glaze Ingredients
1 ½ cups powdered sugar
2 Tablespoons heavy cream*
½ teaspoon vanilla extract
Sprinkles of your choice.
Instructions:
Preheat the oven to 425°F and grease two 6-cavity silicon donut pans with cooking spray.
Whisk together dry ingredients in a large bowl.
Whisk together wet ingredients in a separate bowl.
Add the wet ingredients to the bowl of dry ingredients and mix until evenly combined.
Pour the donut batter into a gallon size ziploc bag. Cut a hole in the corner of the bag and pipe the donut batter into the rubber donut pans.
Bake the donuts in the preheated oven for 10-12 minutes. Remove from the oven and cool on a cooling rack for 15 minutes.
While the donuts are cooling, whisk together powdered sugar, heavy cream, and vanilla until smooth in a small bowl.
Dip donuts in glaze, and top with sprinkles.

*Notes:
You can use any kind of milk that you would like for this recipe. My favorite is whole milk but if I'm making dairy free donuts I use almond milk.
You can also use any kind of oil you'd like. I use avocado, or vegetable oil mostly.
To make the glaze thicker add more powdered sugar, to make it thinner add more heavy cream. You can also use almond milk if you are making the donuts dairy free. (just remember it isn't as thick as heavy cream so you won't need as much.)
